Job Description
You will take full ownership of the cocktail offering, oversee the day-to-day running of the bar, and drive high-standard, high-energy service. Bar Olo is hunting for a skilled, creative, and service-driven Bar Manager to lead the bar team and drive the cocktail program. Based in the heart of Carlton, the venue prides itself on an energetic room, fast-paced service, and exceptional drinks.

Key responsibilities
n
Design and execute creative, balanced, and seasonally rotating cocktail menus—balancing elevated signatures, fast highballs, and razor-sharp classics
n
Establish consistent prep systems (syrups, cordials, batching, infusions, ice management) to ensure speed, consistency, and minimal waste during peak services
n
Manage spirit inventory, recipe costing, COGS targets, pars, ordering, and supplier relationships with boutique and craft distilleries
n
Train front-of-house and bar staff on spirits, cocktail specs, build technique, and service etiquette
n
Lead from the well and the floor during peak rushes, setting the pace, upholding quality, and delivering warm, effortless hospitality
n
Ensure RSA, food safety,



and liquor licensing obligations are strictly adhered to across every shift
n
End of night cash up and venue pack down
n
About you
n
2+ years leading a bar or working as a Head / Senior Bartender in a rapid-paced cocktail-focused venue
n
Deep spirits knowledge, speed on the tools, and a strong track record of developing balanced, scalable cocktail recipes
n
Understanding of beverage margins, pour costs, batching economics, and stock management
n
A cool head under high volume and the ability to rally, train, and inspire a tight-knit bar team
n
Valid Victorian RSA (licensee training preferred)
