SUSHI ON COOKS HILL PTY LTD – Newcastle NSW

This is a hands-on management role at a busy Japanese sushi restaurant. You will work alongside the team during service while taking responsibility for staff, food quality and overall restaurant operations.

The role will primarily be based in the nigiri and sashimi section, so strong hands-on sushi kitchen experience is important. You should be confident with nigiri preparation, fish preparation and cutting, and sashimi, and also be able to work across the sushi roll and hot food sections when required.

Key Responsibilities

- Manage day-to-day restaurant operations and ensure smooth service
- Lead, supervise and train staff
- Manage rosters and daily staffing
- Maintain food quality, stock levels, ordering and FIFO
- Maintain high standards of cleaning, hygiene and food safety
- Prepare nigiri and sashimi and handle/cut fish confidently
- Work across nigiri, sushi roll and hot food sections
- Maintain consistency,



presentation and quality during busy service

About You

- Previous sushi chef experience is required
- Robust experience with nigiri, sashimi and fish preparation/cutting
- Experience in sushi roll preparation
- Restaurant management or strong supervisory experience
- Strong leadership and staff management skills
- Hands-on and willing to work alongside the team
- Reliable, responsible and well organised
- Able to work independently and make decisions
- Comfortable working in a fast-paced environment
- Good understanding of food safety and hygiene
