The Problem

You can run a venue in your sleep. You’ve carried the roster, the compliance, the bad weeks and the big Saturdays. You’ve trained managers who’ve since moved on and up.

And you’re still on a salary, still building equity for someone whose name is on the door. There’s no next rung. That’s not a you problem - that’s a structure problem.

The Solution

Mad Mex has a 12-month program that takes experienced hospitality operators from employed to owner. Not a maybe. Not “opportunities for the right person.” A plan with dates on it.

- Months 1–3: Learn our systems, our menu and our standards. Paid, at manager level - you don’t take a pay cut to do this.
- Months 4–8: Run a Mad Mex restaurant as your own. Full P&L; accountability, our support behind you.
- Months 9–12: Franchise readiness. Site selection, business planning, funding and finance structuring with our franchising team.
- Month 12: Handover. Your restaurant, your business, your upside.

We work with finance partners who understand the model, and we’ll help structure the funding so ownership isn’t gated behind a deposit you don’t have yet.

Who We’re After

- 3+ years running a pub, bar, QSR, café or restaurant - multi-site a bonus
- You’ve owned a P&L; and can talk labour, COGS and wastage without notes
- You’ve built and kept a team in a tight labour market
- You want equity, not just a title
- Full working rights in Australia
