This is more than simply managing a wine list — you will have the opportunity to shape the overall wine experience and play an important role in the continued growth of both venues.
THE ROLE

We are seeking an experienced and passionate Head Sommelier to oversee the wine program across two premium venues.
Working directly with the owners, you will have genuine autonomy across wine selection, purchasing, pricing, supplier relationships, team development and the overall guest experience.
You will be commercially minded, highly knowledgeable and passionate about wine, while still understanding that great hospitality is ultimately about creating memorable experiences for guests.

YOUR RESPONSIBILITIES

- Lead and develop the wine program across two premium venues
- Curate and maintain diverse wine lists featuring local, Australian and international wines
- Manage wine purchasing, pricing, stock control and inventory
- Build strong relationships with suppliers, winemakers and distributors
- Monitor wine margins, GP and overall commercial performance
- Train and develop the broader F&B; team in wine knowledge and service
- Deliver exceptional wine service and guest experiences
- Coordinate wine tastings,



events and supplier activations
- Identify opportunities to grow wine sales and enhance the overall guest experience
- Work closely with the owners and venue leadership teams on the continued development of the wine program

SKILLS & EXPERIENCE

- Previous experience as a Sommelier, Head Sommelier or senior wine-focused F&B; professional
- Extensive knowledge of Australian and international wines
- Strong understanding of wine service, cellar management, purchasing and stock control
- Commercial awareness with the ability to manage margins and wine performance
- Confident building relationships with suppliers, winemakers and industry contacts
- A natural ability to educate and develop teams
- Excellent communication and guest engagement skills
- WSET, CMS or equivalent wine qualifications will be highly regarded
- Genuine passion for hospitality, wine and delivering exceptional experiences
