Full-time Cook position available in Crows Nest NSW 2065
Plan B Bar is a full-service restaurant and bar located in Crows Nest, Sydney. The venue offers a range of freshly prepared menu items, including signature burgers, fried chicken, wings, hotdogs, loaded fries, house-made sauces and rotating specials.
We are seeking a skilled Cook to prepare and cook food using fresh ingredients and commercial cooking techniques. The role involves detailed mise en place, preparation of batters and sauces, portioning and seasoning proteins, controlled use of fats and oils, cooking to order, and maintaining consistent food quality throughout restaurant service.
The Cook will contribute to the development and improvement of recipes and collaborate with the kitchen team on monthly and seasonal specials under the direction of the owner or senior kitchen staff. This is a skilled cooking position involving substantially more than basic food assembly or reheating.
Position Responsibilities and Tasks:
- Examine the quality, freshness and condition of ingredients before use.
- Prepare, trim, portion, season and marinate fresh meat, poultry, vegetables and other ingredients.
- Complete detailed mise en place for lunch, dinner and late-night restaurant service.
- Prepare batters, breading, coatings, marinades, dressings, glazes, aioli and house-made sauces.
- Use appropriate quantities and types of fats, oils and seasonings to achieve the required flavour, texture and consistency.
- Regulate the temperatures of grills, fryers, ovens and other commercial cooking equipment.
- Prepare and cook menu items, including proteins, fried chicken, wings, burgers, hotdogs, loaded fries and side dishes.
- Develop and improve recipes and collaborate with the kitchen team on monthly and seasonal specials under appropriate supervision.
- Cook food to order and coordinate multiple components so dishes are completed and presented consistently.
- Portion, assemble, plate and garnish food in accordance with the venue's quality and presentation standards.
- Prepare food to accommodate dietary requirements and communicate allergen information appropriately.
- Monitor cooking times, temperatures, portion sizes, flavour, freshness and presentation.
- Inspect, store, label and rotate ingredients in temperature-controlled facilities.
- Assist with stock control, food ordering requirements and minimising food wastage.
- Comply with food safety, hygiene, allergen-management and workplace health and safety requirements.
- Maintain clean, organised and sanitised preparation areas, cooking stations, equipment and storage facilities.
- Communicate effectively with kitchen and front-of-house staff regarding customer orders and special requests.
Qualifications and Skills:
- A Certificate IV in Kitchen Management or equivalent relevant experience.
- At least one year of experience working in a full-service restaurant, licensed restaurant, hotel, pub or similar commercial kitchen.
- Demonstrated experience preparing food from fresh ingredients and producing sauces, batters, marinades and other components from scratch.
- Strong practical skills in grilling, frying, baking, seasoning, portioning and cooking food to order.
- A sound understanding of food safety, hygiene and allergen-management requirements.
- The ability to work efficiently and maintain consistent quality during busy restaurant service.
- Solid teamwork, communication, organisation and time-management skills.
Salary: This is a full-time position with competitive remuneration between $79,000 - $85,000 p.a. plus superannuation for a 38-hour work week.
