Led by Executive Culinary Director Stephen Nairn, our portfolio includes award-winning Omnia, Yugen Dining and Yugen Omakase, together with The Grand Room, all located within the prestigious Capitol Grand on the corner of Toorak Road and Chapel Street, South Yarra, as well as Portside.

We are looking for experienced waiters who are ready to bring their craft to a floor that will actually challenge it. If fine dining is your background and you want to keep growing in it, read on.

The Role

This is not an entry-level position. We are looking for someone who already knows how a fine dining floor runs - and who wants to be part of one that runs exceptionally well.

Day to day, you will be:

- Running your section with ownership and consistency across every service
- Guiding guests through the full dining experience with genuine confidence and warmth
- Delivering menu and beverage knowledge with command - food literacy and wine awareness expected
- Sharing provenance and product stories at the table in a way that feels natural, not scripted
- Working closely with the team to ensure service is seamless from first cover to last
- Holding a standard in every interaction that reflects the quality of the room





Who We're Looking For

We want someone who has worked in fine dining and brings that experience with them from day one.

You will fit right in if you bring:

- Solid front-of-house experience in a fine dining or high-end restaurant environment
- Strong food and beverage knowledge - you know your menu and your wine list
- A skilled manner and genuine ease with discerning guests
- Composure under pressure and consistency across every service
- A current RSA

You read the room before you enter it. You hold your section to a standard without being asked. You understand that at this level, the details are everything.
