A new luxury lodge and fine-dining restaurant is opening later this year, and we're looking for a Restaurant Manager to take ownership of the front of house operation from day one.
This is a genuine pre-opening opportunity. You'll build the team, establish the service culture and set the standard for what the guest experience looks and feels like from the very first service.
The restaurant will seat approximately 44 guests and sit within an adults-only luxury lodge, with a beautifully considered setting of marble, brass, timber and handmade ceramics. The food will be produce-led and fire-driven, supported by an on-site kitchen garden, whole-fish cooking and a strong Australian and international wine offering.
The Role:
Reporting into the wider Food & Beverage leadership team, you'll be the face of the restaurant and ultimately responsible for the room, the team and the guest experience.
You'll be responsible for:
- Building, training and leading the front of house team ahead of opening
- Establishing service standards, sequences and operating procedures
- Hosting the floor and creating a warm, highly personalised guest experience
- Leading wine and beverage service alongside the venue's beverage offering
- Working closely with the Executive Chef to create a seamless food and service experience
- Managing reservations, bookings, covers and the commercial performance of the restaurant
- Maintaining consistently high standards across every service
- Developing and mentoring a team that takes genuine pride in what they deliver
About You:
You're an experienced Restaurant Manager or senior FOH leader who understands high-end hospitality and knows how to create a room people want to return to.
You have:
- Experience across fine dining, hatted restaurants or luxury hotels
- Strong knowledge of food, wine and beverage
- The confidence and presence to lead from the floor
- A genuine passion for hospitality and guest experience
- Strong leadership and team development skills
- The ability to build structure and standards in a pre-opening environment
- A calm, hands-on approach when service gets busy
Sommelier training or WSET qualifications will be highly regarded, as will previous pre-opening or luxury lodge/hotel experience.
Most importantly, you're a host. You understand that great service isn't just about standards and systems — it's about making people feel looked after.
Salary & Benefits:
- Up to $140,000 plus super + tips (depending on experience)
