Established in 1926, Hotel Gosford is an iconic, heritage-listed pub located in the heart of Gosford on the NSW Central Coast. Following an extensive renovation, the award-winning venue offers a contemporary yet welcoming environment featuring quality dining, live entertainment, sports, functions and accommodation.
Gosford Hotel - At the heart of the venue is Earl’s Kitchen, serving classic pub favourites with a modern twist. The menu showcases fresh salads, locally sourced seafood, quality steaks, rotisserie meats and a range of dishes prepared in-house using ingredients from local suppliers and producers.
Hotel Gosford is seeking a qualified and experienced Chef to join its professional kitchen team.
Key Responsibilities
- Prepare, cook and present high-quality dishes in accordance with established recipes and presentation standards
- Plan and develop menu items in consultation with the Head Chef and kitchen management
- Prepare a variety of pub classics, steaks, seafood, rotisserie meats, salads and seasonal specials
- Monitor the quality of food throughout preparation, cooking and presentation
- Ensure consistency in taste, portion size and presentation across all services
- Coordinate food preparation and service during busy lunch and dinner periods
- Manage individual sections of the kitchen and ensure meals are delivered efficiently
- Check the freshness and quality of ingredients and other kitchen supplies
- Assist with ordering, receiving, storing and rotating stock
- Maintain effective stock control and minimise food wastage
- Cater for dietary requirements, allergies and special customer requests
- Ensure all food is stored, prepared and served in accordance with food safety regulations
- Maintain a clean, organised and hygienic kitchen environment
- Operate commercial kitchen equipment safely and report any maintenance issues
- Train, guide and support junior cooks, kitchen hands and other kitchen staff
- Assist with estimating food and labour requirements
- Contribute ideas for seasonal menus, daily specials and function packages
- Work collaboratively with kitchen and front-of-house teams to deliver an excellent guest experience
- Comply with workplace health and safety policies and established kitchen procedures
To be successful in this role, you will have:
- A relevant commercial cookery qualification
- Previous experience as a Chef in a busy hotel, pub, restaurant or comparable venue
- Strong knowledge of food preparation and commercial cooking techniques
- Experience with modern Australian cuisine and high-volume pub dining
- Excellent organisational and time-management skills
- The ability to maintain quality and composure during busy services
- A sound understanding of food safety, hygiene and workplace safety requirements
- Strong communication and teamwork skills
- A reliable, professional and positive attitude
- Flexibility to work across a rotating roster, including evenings, weekends and public holidays
