Night Baker | Lord Howe Island | Accommodation Available

This is a bakery role located on Lord Howe Island, involving preparing and baking fresh breads, muffins and other bakery products for the following day. You will start work in the evening/night to ensure products are ready for breakfast and service. The role involves adapting to a small, remote hospitality operation where flexibility and teamwork are particularly important.

Key responsibilities

- Preparing and baking fresh breads, muffins and other bakery products for the following day
- Starting work in the evening/night to ensure products are ready for breakfast and service
- Mixing, shaping, proving and baking dough according to recipes and production requirements
- Preparing doughs and components in advance and managing fermentation/proofing times




- Maintaining consistent quality, presentation and portion sizes
- Keeping the bakery/kitchen clean, organised and compliant with food-safety requirements
- Monitoring stock levels and helping management with ordering/preparation of ingredients
- Working independently during overnight hours while communicating with the kitchen/hospitality team
- Following workplace health and safety procedures

- Previous commercial baking experience
- Positive time management
