Hotel Sorrento is looking for an experienced Bars Operations Manager to take the lead and oversee some of the Mornington Peninsula's most iconic bars: Salt, Front Bar, Rooftop, Shi Hui Shi Bar, Pool Bar, Lounge Bar and our new Lobby Bar.

This senior, hands-on role will work alongside the Beverage Manager and lead the Bar management team and is accountable for the department's operational and financial performance, workforce, guest experience and service standards.
n

What you'll do:
n
From busy summer trading and major events to the ever-changing demands of the business,, you'll ensure we have the right people, resources and plans in place to deliver consistently.
n
n
Lead, inspire and develop the Bar management team.
n
Take ownership of departmental performance, budgets and KPIs.
n
Plan staffing, rosters and management coverage around trade and business needs.
n
Drive revenue, productivity and profitability across all venues.
n
Oversee recruitment, training, performance and team development.
n
Maintain exceptional service, presentation and guest experience standards.
n
Lead operations during busy periods, events and complex trading environments.
n
Work with security providers to manage venue capacity, entry,



queues and patron behaviour.
n
Ensure incidents are managed, documented and followed through appropriately.
n
Maintain strong stock control, cellar standards and wastage management.
n
Ensure all venues, equipment and storage areas are maintained to a high standard.
n
Maintain compliance with Victorian liquor licensing, wagering, RSA, safety and hotel requirements.

About the Candidate
n
A confident, hands-on hospitality leader who enjoys being on the floor, developing people and making things happen.
n
n
Senior management experience within a high-volume multi outlet bars, hotel or hospitality operation.
n
Experience leading managers and large teams.
n
Solid workforce planning and labour management skills.
n
Commercial understanding and experience managing budgets and KPIs.
n
The ability to stay calm and make good decisions under pressure.
n
Strong organisational and problem-solving skills.A genuine passion for hospitality and creating memorable guest experiences.
n
A leadership style that is visible, accountable and focused on developing others.
n
Current Victorian RSA
n
Valid forklift licence
n
Current TAB Venue Manager accreditation
n
Flexibility to work evenings, weekends and public holidays.
n
Availability aligned to summer and major trading periods.
