Role Description The Demi Chef De Partie is a contract (Oct 2026 till 5th Jan 2027), in office role based at Melbourne Marriott Hotel in Melbourne, VIC. This position supports the kitchen team in preparing and cooking high-quality dishes, with a focus on modern Australian cuisine and hotel restaurant standards. Day-to-day tasks include assisting with mise en place, maintaining food quality and presentation, following recipes and menu guidelines, and ensuring compliance with food safety and hygiene standards.
The role also involves coordinating with senior chefs, supporting service during busy periods, minimizing food waste, and helping to keep kitchen equipment and work areas clean, safe, and organized.

Partie will contribute to a positive team culture, support training of junior team members, and uphold Marriott brand standards in every aspect of kitchen operations.
Qualifications
- Professional culinary training or relevant cookery qualification, with experience in hotel, restaurant, or high-volume kitchen environments.
- Strong skills in food preparation, cooking techniques, and plate presentation, particularly in modern Australian or contemporary cuisine.
- Knowledge of food safety regulations, HACCP principles, and best practices for hygiene and safe kitchen operation.
- Ability to work effectively within a diverse team, follow direction from senior chefs, and communicate clearly with kitchen and service staff.
- Capability to perform in a fast-paced environment, manage multiple tasks during peak service times, and maintain attention to detail.
- Flexibility to work a range of shifts, including early mornings, evenings, weekends, and public holidays, in line with business needs.
- Commitment to guest satisfaction, quality standards, and continuous improvement, with a professional, respectful approach in the workplace.
- Previous experience in a five-star or similar standard property is advantageous, as is familiarity with Marriott or comparable international hotel brands.
