About the role
We are seeking an experienced and creative Executive Chef to lead our kitchen team, shape the hotel's culinary direction and build the reputation of our food and beverage offering.
You will oversee kitchen operations across dapl restaurant, breakfast, bar, in-room dining, café service, conferences and events.

About you
Previous experience as an Executive Chef or Head Chef in a hotel or multi-outlet venue
A creative and commercial approach to menu development
Demonstrated success leading and developing a kitchen team
Strong knowledge of food costs, labour management, inventory and compliance
A commitment to quality, consistency and memorable guest experiences




Your responsibilities
Develop seasonal menus focused on modern Australian cuisine and quality, sustainable ingredients
Lead, mentor and develop the kitchen team
Oversee daily operations and maintain an efficient kitchen
Ensure consistently high standards of taste, presentation and food safety
Manage food costs, labour, inventory and wastage
Work collaboratively with hotel departments
Oversee and maintain the hotel's HACCP food safety program
Contribute to hotel and group food and beverage initiatives
