The Alexandra Hotel in Leura is seeking an experienced and motivated Sous Chef to join its team on a full-time basis.

Located in the beautiful Blue Mountains, the Alexandra Hotel operates a busy pub kitchen and is looking for a capable chef who can support the Head Chef, maintain high standards and perform confidently during fast-paced services.

Key responsibilities
Assist the Head Chef with the day-to-day operation of the kitchen
Prepare, cook and present high-quality meals consistently
Supervise and support chefs, cooks and kitchen staff during service
Help plan menus, specials and seasonal dishes
Monitor food quality, presentation and portion control
Manage stock rotation, ordering and food-cost control
Maintain food-safety, hygiene and workplace-safety standards
Assist with staff training, rostering and allocation of kitchen duties
Ensure efficient service during busy lunch, dinner, weekend and holiday periods
Step into the Head Chef’s duties when required

About you The successful candidate will have:
Relevant cookery qualifications or equivalent experience




Previous experience as a Sous Chef or senior Chef de Partie
Strong experience in a busy pub, bistro or high-volume kitchen
Valuable leadership, communication and organisational skills
Sound knowledge of food safety and kitchen compliance
The ability to work calmly and efficiently under pressure
Flexibility to work evenings, weekends and public holidays
Full Australian working rights or eligibility for employer-sponsored work
