Job description:

Ganesha Traders Pty Ltd t/a Smokin' Joe's Pizza & Grill Healesville is seeking an experienced, skilled Cook to join our fast-paced commercial kitchen in Healesville. The role requires a professional cook capable of managing multiple kitchen sections, including our grill, pasta, and deep-frying stations, while maintaining exceptional food quality, workflow efficiency, and rigorous kitchen hygiene standards.

Key responsibilities & core duties:
Section Management & Kitchen Execution: Operate and manage key kitchen stations independently, specializing in the preparation of gourmet pastas, risottos, premium grill items, and Sides & Salads under high-volume service pressure.
Fryer & Hot Station Control: Maintain optimal operation of the deep-frying cooking stations to ensure consistent texture, crispiness, and presentation for appetizers and sides.
Mise en Place & Fresh Preparation: Execute daily food preparation tasks, including making specialty pizza dough, signature house sauces, marinades, stocks, and preparing fresh ingredients.
Commercial Equipment Operation: Utilize and maintain professional kitchen equipment safely and effectively, including flat-top grills, deep fryers, and commercial ovens.
Quality & Portion Control: Ensure every dish meets strict culinary standards,



and portion control guidelines before service.
Stock & Inventory Maintenance: Assist with food rotation, stock management, proper storage, and inventory organization.
Food Safety & Hygiene Compliance: Adhere strictly to HACCP guidelines, council food safety regulations, and end-of-shift sanitation protocols.

Skills & Experience Required:
Minimum 1 year experience working as a cook/chef in a fast-paced commercial kitchen workplace.
Robust working knowledge of hot section management, grill operations, pasta & frying stations.
Ability to remain calm, organized, and effective during peak weekend and evening rushes.
Relevant commercial cookery qualifications and a commitment to maintaining high safety standards.

Mandatory Qualifications:
Certificate III / Certificate IV in Commercial Cookery
Diploma of Hospitality Management
