nThe Rasoi Tandoori Indian Kitchen – Mount Martha is seeking an experienced and enthusiastic Cook to oversee kitchen operations within its busy and established restaurant. Located in Mount Martha on the Mornington Peninsula, the restaurant specialises in authentic Indian cuisine prepared using traditional cooking techniques and quality ingredients.n
nOperating seven days a week, the restaurant provides both dine-in and takeaway services to a diverse and loyal customer base. The business is committed to delivering consistently high-quality Indian cuisine and attentive service in a professional and fast-paced environment.n
nThis position presents an opportunity for a qualified and experienced Cook with robust knowledge of Indian cuisine, sound culinary skills and effective kitchen leadership capabilities to contribute to the efficient operation of a dedicated kitchen team.n
nKey Responsibilities: n
n•Examining and inspecting foodstuffs and fresh ingredients on delivery to ensure quality, freshness and suitability for use in Indian cuisine preparationn
n•Preparing, seasoning and cooking a wide range of authentic Indian dishes including curries, tandoori specialties, kebabs, biryanis and vegetarian dishes using traditional Indian herbs and spicesn
n•Operating and regulating temperatures of tandoor ovens, grills, stovetops and other cooking equipment to ensure consistent and authentic cooking resultsn
n•Preparing and cooking tandoori items including marinated meats, kebabs and tandoori breads such as naan,
roti and other Indian breads in the tandoor ovenn
n•Portioning cooked food, plating dishes and adding appropriate gravies, sauces, garnishes and accompaniments to meet presentation standardsn
n•Preparing food to meet special dietary requirements including vegetarian, vegan and gluten-free options as required by customersn
n•Storing food and ingredients in temperature-controlled facilities in accordance with food safety standards and regulationsn
n•Receiving, checking and storing food supplies and ingredients and maintaining adequate stock levels to meet operational requirementsn
n•Maintaining cleanliness and hygiene of food preparation areas, cooking equipment and kitchen facilities in accordance with food safety standardsn
n•Planning and estimating food requirements and assisting in menu planning in consultation with managementn
n•Training and supervising junior kitchen staff in food preparation techniques and Indian cooking methods.n
nTo be successful in this role, it is essential you have:n
n•Hold a Certificate III & IV or an equivalent recognised qualification. n
n•Have at least one year of relevant experience working as a Cook in a professional commercial kitchen environment. n
n•Demonstrated practical knowledge and experience in preparing and cooking authentic Indian cuisine including tandoori cooking techniques, curry preparation and Indian bread making n
n•Sound knowledge of food hygiene, food safety standards and safe food handling practices applicable to commercial kitchen operations n
n•Experience in operating tandoor ovens, grills and commercial cooking equipment used in Indian cuisine preparationn
