About the role
n
We are recruiting a
Bar Supervisor / Assistant Sommelier
to support daily bar and beverage operations while delivering an exceptional guest experience on the floor.
n
This is a
hands-on role
, combining bar service, wine expertise, and team supervision. You will work closely with the Head Sommelier. The role suits someone passionate about wine - particularly Italian wines - who enjoys being operational, leading by example, and contributing to a collaborative FOH team.
n
The role offers a
5-day working week
, with finishes by 10:30 pm at the latest - an excellent work-life balance for a bar position.

Responsibilities
n
n
n
Oversee daily bar operations and service execution
n
n
Deliver hands-on bar and floor service during busy services
n
n
Supervise and support a small, experienced bar team (approx. 3–4 staff)
n
n
Manage wine ordering, stock control, and general cellar organisation
n
n
Execute and contribute to the ongoing development of the wine list
n
n
Ensure service standards, cleanliness,
and organisation behind the bar
n
n
Train and guide junior FOH and bar staff on wine knowledge and service
n
n
Work closely with management to ensure smooth communication between FOH and BOH
n
n
Contribute creatively to menu evolution and new dish development
n
n
Uphold food safety, hygiene, and workplace standards
n
n
About you
n
n
n
Previous experience as a
Bar Supervisor, Assistant Sommelier, or senior bar professional
n
n
Strong emphasis on
Italian wines
(approx. 70% Italian / 30% Australian, 75+ wine references)
n
n
Hands-on, organised, and comfortable in a fast-paced, high-volume environment
n
n
Natural leader with an outgoing, hardworking, and team-oriented mindset
n
n
Passionate about hospitality, service, and Italian food culture
n
n
Reliable, professional, and looking for a
long-term role
within a stable venue
n
n
Italian experience or heritage is a plus, but not essential.
n
n
Fluent English is essential
