About the Role

Reporting directly to the General Manager, you'll lead all aspects of the kitchen operation while working closely with the leadership team to continue building the Clare Country Club's food offering.

The venue caters for a broad range of guests and occasions, including:

- À la carte restaurant service

- Breakfast operations

- Conferences and corporate events





- Weddings and special events

- Golf and leisure guests

- Seasonal functions and promotions

This is a genuine leadership role where you'll have the opportunity to influence menus, develop your team and contribute to the property's ongoing growth.

Key Responsibilities

- Lead and mentor the kitchen team through positive, hands-on leadership.

- Execute seasonal menus that celebrate the best flavours, producers and wines of the Clare Valley.

- Create memorable dining experiences that keep guests returning and position the restaurant as a destination in its own right.

- Manage food costs, stock control and purchasing to achieve budget targets.

- Maintain labour costs through effective rostering and workforce planning.

- Ensure compliance with all food safety, WHS and HACCP requirements.

- Work collaboratively with the Food & Beverage and Events teams to deliver exceptional guest experiences.

- Drive continuous improvement across kitchen operations, systems and standards.

About You

We're looking for someone who is:

- A driven Head Chef or ambitious Sous Chef with the vision, leadership and commercial acumen to elevate a growing food operation.

- Passionate about quality food and delivering memorable guest experiences.

- A confident leader who enjoys developing and mentoring teams.

- Commercially minded with strong experience managing food costs and kitchen performance.

- Organised and able to thrive in a busy, multi-faceted hospitality setting.

- Creative, enthusiastic and keen to be part of an exciting period of change.

Experience within hotels, resorts or quality hospitality venues will be highly regarded.
