Blind TigerOur intimate members bar showcases world-class mixology in a refined, creative environment. The team collaborates closely with the kitchen to reimagine classic cocktails and deliver elevated experiences. Discipline, creativity, and a strong work ethic are a must in this space.

About the Role





We are looking for talented Pastry Chefs to join our kitchen team and play a key role in shaping and delivering an exceptional pastry and dessert offering. This is an opportunity to work alongside a talented culinary team in a state-of-the-art kitchen, producing refined, thoughtful and beautifully executed pastries, breads and desserts. With a strong focus on quality, seasonality and craftsmanship, you will have the opportunity to contribute creatively to the sweet program while maintaining the precision and consistency expected across our kitchens.

Key Responsibilities

- Create, prepare and execute a high-quality range of pastries, breads, desserts and sweet components.
- Maintain exceptional standards of technique, presentation, consistency and attention to detail across all service.
- Contribute ideas to the development and refinement of seasonal pastry and dessert menus.
- Manage daily pastry preparation, mise en place and service requirements efficiently and to a high standard.
- Work closely with the broader kitchen team to ensure smooth service and seamless integration of pastry into the overall offering.
- Maintain excellent standards of cleanliness, organisation, food safety and kitchen hygiene.
- Manage ingredients effectively, including stock rotation, portion control, yield and minimising waste.
- Support and mentor junior kitchen team members, contributing to a positive, collaborative and high-performing kitchen culture.

About You

To join the culinary team at The Belongil, you will bring a deep respect for produce, strong technical fundamentals, and a drive to excel in a high-performing kitchen. You will have:

- Formal qualification in Patisserie, Commercial Cookery or a related culinary discipline preferred;
- Previous experience in a professional pastry kitchen, ideally within a high-end restaurant, hotel, resort or premium hospitality environment;
- Strong knowledge of classical and contemporary pastry techniques, including desserts, cakes, creams, mousses, chocolate and plated desserts;
- Proven post-qualification experience in a premium, quick-paced, or fine-dining kitchen environment;
- For leadership roles: demonstrated capability in managing service, staff training, and operational kitchen systems;
- A calm, composed demeanour under pressure and excellent communication skills across both FOH and BOH teams;
- A genuine passion for high-end culinary craft, continuous learning, and team collaboration.
