Head Bartender

Baia The Italian – Darling Harbour, Sydney

Baia The Italian is looking for an experienced bartender ready for the next step.

This role sits between solid service bartending and full management. You’ll still be on the tools, leading from the front during service, while gaining the responsibility and freedom to develop your skills beyond the bar.

The role:
Lead the bar during service while remaining hands-on
Support and guide the team to maintain flow, consistency, and standards
Take responsibility for setup, prep, and daily organisation
Be involved in stock control, ordering, and basic reporting
Contribute to cocktail development and seasonal ideas
Work alongside management to improve efficiency and sales

You bring:
Solid experience in high-volume bars or restaurants
Confidence with classics and a growing interest in cocktail creation
A structured, reliable approach to service
Willingness to learn the “why” behind operations, not just the “how”
Good communication and natural leadership presence

Job Types: Full-time, Casual Pay: $35.00 – $42.00 per hour
