About the role
n
We are recruiting
two experienced Sous Chefs
to support the Head Chef in leading a high-functioning kitchen team. The Sous Chefs rotate schedules, ensuring one is always present, with a structure designed to protect
work-life balance
(
4 to 5 days on / **** hours per week
).

This role is
operational and people-focused
: you will be hands-on during service, responsible for quality control, team leadership, and smooth execution.

This role suits chefs who

while remaining composed and quality-driven, with ***** lunch cover and 100+ dinner cover services.

Responsibilities

Lead daily kitchen operations alongside the Head Chef
n
n
Oversee service execution, quality control, and consistency across all sections
n
n
Taste and monitor dishes during service to maintain standards
n
n
Ensure all sections are service-ready and working efficiently
n
n
Support ordering and stock control as required
n
n
Train, mentor, and guide a team of
810 chefs per shift
n
n
Maintain a calm, firm, and respectful leadership presence in a fast-paced environment
n
n
Contribute creatively to menu evolution and new dish development
n
n
Uphold food safety, hygiene, and workplace standards
n
n
About you
n
n
n
Minimum 57 years in qualified kitchens, including previous experience as a Sous Chef or Senior CDP / Junior Sous in a high-volume restaurant.
n
n
Strong technical ability in Italian cuisine both traditional and modern styles
n
n
Calm, hands-on leadership style with excellent communication skills
n
n
Comfortable managing a busy kitchen with multiple sections and daily specials
n
n
Reliable, well-organised, and focused on continuous improvement
n
n
A team player with a desire to grow, take ownership and develop others
n
n
Fluent English is not mandatory
n
n
Italian experience or heritage is a plus, but not essential.
n
