Lead the coffee culture at one of Manly’s most exciting Italian dining destinations.

Cibaria Manly is a vibrant beachside Italian dining precinct bringing the energy, generosity and all-day ritual of Italian hospitality to Manly Beach.

From early morning espresso through to long lunches, aperitivo and dinner, Cibaria celebrates the many ‘rias’ of Italian food and drink — and at the heart of our mornings is our caffetteria .
n
Inspired by Italy’s rich coffee culture, our caffetteria serves expertly crafted espresso, silky cappuccinos and indulgent affogatos alongside house-made pastries, artisanal gelato and a bustling all-day dining experience.
n
We are now looking for an experienced and passionate Head Barista to take ownership of our coffee program, lead our barista team and establish a coffee experience that becomes part of the daily ritual of Manly locals and visitors alike.
The Role n
This is more than a position behind the machine.
n
As Head Barista, you will be the driving force behind Cibaria’s coffee program — setting the standard for quality, consistency, speed and hospitality while developing a confident and passionate team around you.
n
You will work closely with the venue leadership team to ensure the caffetteria operates at an exceptional level, particularly through busy breakfast and morning trade.
n
You will be responsible for:
n
n
- Leading the caffetteria team and setting exceptional coffee and service standards
n
- Dialling in daily and maintaining consistency across every extraction
n
- Delivering exceptional espresso-based beverages at high volume
n
- Perfecting milk texture, presentation and latte art
n
- Training, coaching and developing junior baristas
n
- Creating transparent coffee procedures and maintaining consistency across the team
n
- Troubleshooting coffee equipment and ensuring machinery is maintained to a high standard
n
- Managing coffee, milk and related stock levels and ordering
n
- Minimising wastage and maintaining strong product controls
n
- Driving an efficient workflow during high-volume periods
n
- Working collaboratively with the broader FOH and management teams to create a seamless guest experience
n
- Bringing energy, professionalism and genuine hospitality to the caffetteria every day
n
About You n
You are someone who genuinely cares about coffee.
n
n
- You understand that an exceptional coffee program is built on precision, consistency and technique — but also personality, pace and the ability to create a memorable experience for every guest.
n
- Minimum 1 year of experience in a specialty coffee or high-volume café workplace
n
- Strong knowledge of espresso extraction, dialling in and grinder calibration
n
- Excellent milk texturing and latte art skills
n
- Previous leadership, supervisory or senior barista experience
n
- Confidence training, mentoring and developing other baristas
n
- Strong attention to detail and commitment to consistency
n
- Ability to remain calm,
organised and quick during high-volume service
n
- Excellent grooming and professional presentation
n
- Fluent spoken English
n
- Full Australian working rights
n
- Availability across early mornings, weekends and public holidays
n

- An appreciation for Italian coffee culture and traditions
n
- Experience managing stock, ordering and wastage
n
- Knowledge of coffee machine and grinder maintenance
n
- Experience helping build or develop a coffee program
