The Alexandra Hotel in Leura is seeking an experienced and motivated Sous Chef to join its team on a full-time basis.

Located in the beautiful Blue Mountains, the Alexandra Hotel operates a busy pub kitchen and is looking for a capable chef who can support the Head Chef, maintain high standards and perform confidently during fast-paced services.

Key responsibilities

- Assist the Head Chef with the day-to-day operation of the kitchen
- Prepare, cook and present high-quality meals consistently
- Supervise and support chefs, cooks and kitchen staff during service
- Help plan menus, specials and seasonal dishes
- Monitor food quality, presentation and portion control
- Manage stock rotation, ordering and food-cost control
- Maintain food-safety, hygiene and workplace-safety standards
- Assist with staff training, rostering and allocation of kitchen duties
- Ensure efficient service during busy lunch, dinner, weekend and holiday periods
- Step into the Head Chef’s duties when required

About you The successful candidate will have:

- Relevant cookery qualifications or equivalent experience




- Previous experience as a Sous Chef or senior Chef de Partie
- Strong experience in a busy pub, bistro or high-volume kitchen
- Good leadership, communication and organisational skills
- Sound knowledge of food safety and kitchen compliance
- The ability to work calmly and efficiently under pressure
- Flexibility to work evenings, weekends and public holidays
- Full Australian working rights or eligibility for employer-sponsored work
