Annual Salary
AUD 75,000 ~ 85,000 per annum plus superannuation
H&J; Partners trading as Mr.H Cafe and Bar is seeking an experienced Cook to prepare and present a varied range of breakfast, brunch and lunch dishes, including contemporary café meals, Asian-inspired and Korean-fusion dishes, soups and seasonal specials.
Key Responsibilities
· Preparing fresh ingredients for daily service by washing, trimming, cutting, portioning, seasoning and marinating them as required.
· Preparing house-made marinades, sauces, dressings, pickled vegetables, slaws, fillings, garnishes and other accompaniments from base ingredients.
· Preparing and cooking a diverse range of contemporary breakfast, brunch and lunch dishes, including seafood, egg-based dishes, soups and seasonal specials.
· Preparing and cooking Asian-inspired and Korean-fusion dishes, including the café’s signature Korean beef dish, using fresh ingredients and house-made seasonings.
· Applying a range of cooking techniques, including grilling, roasting, baking, frying, sautéing, simmering and poaching, according to the ingredients and requirements of each dish.
· Operating ovens, grills, stovetops, fryers and other commercial kitchen equipment safely and selecting appropriate temperatures and cooking times for each menu item.
· Monitoring dishes throughout preparation and cooking and making necessary adjustments to flavour, texture, cooking time and consistency.
· Completing individual customer orders during service and modifying ingredients or preparation methods appropriately for dietary requirements and allergies.
· Maintaining appropriate labelling, storage, temperature control and stock-rotation practices for raw ingredients and food prepared on the premises.
· Keeping preparation areas, utensils, cooking equipment and storage areas clean and sanitised throughout each shift.
· Carrying out all food preparation, cooking, storage and cleaning activities in accordance with applicable food safety, hygiene and workplace health and safety requirements.
· Assisting with menu planning and suggesting seasonal Asian-inspired and Korean-fusion dishes that complement the café’s existing menu.
Qualification & Experience
· AQF Certificate III or Certificate IV in Commercial Cookery, or an equivalent relevant qualification.
· At least three years of relevant commercial cooking experience in a café, restaurant or comparable hospitality environment, including at least two years of practical experience in Asian cuisine.
Skills
· Sound food preparation, cooking, seasoning, portioning and plating skills.
· Ability to follow recipes and produce dishes consistently within required service times.
· Good understanding of food quality, safe temperature control, storage and cross-contamination prevention.
· Ability to organise mise en place and manage several orders efficiently during busy service periods.
Job Type: Full-time
Pay: $75,000.00 – $85,000.00 per year
