Food & Beverage Manager

About the Role

Set in the heart of the iconic Mornington Peninsula wine region, our c lient is looking for an experienced, passionate Food & Beverage Manager to lead their exceptional culinary and dining operations.

In this role, you will oversee all food and beverage touchpoints across the property, including the award-winning hatted restaurant, bespoke weddings and events, conferencing, cellar door, and in-room guest dining. You will champion service excellence, foster a positive team culture, and drive profitability while maintaining the signature luxury boutique experience.

Key Responsibilities

- Operational Leadership: Oversee daily operations across restaurant, weddings, corporate events, and bar service.
- Team Management: Recruit, train, mentor, and inspire a high-performing F&B; team to deliver warm, refined, and attentive service.
- Financial Performance: Manage budgets, COGS, labor costs, inventory, and labor scheduling to maximize revenue and profitability.
- Guest Experience: Act as an ambassador for the hotel, engaging with guests to ensure seamless, memorable boutique dining experiences.
- Quality & Compliance: Maintain immaculate hygiene standards, food safety protocols, and Responsible Service of Alcohol (RSA)



compliance across all outlets.

What We Are Looking For
- Experience: 2+ years of management or leadership experience in boutique hotels, fine dining, or premium event venues.
- Passion for F&B;: Deep appreciation for regional produce, exceptional local wines, and contemporary dining trends.
- Leadership Skills: Proven ability to lead by example, motivate staff, and thrive in a fast-paced environment.
- Business Acumen: Strong understanding of F&B; financials, rosters, and cost control systems.
- Certifications: Valid RSA certificate and relevant hospitality qualifications.
