Full-time Chef de Partie positions available at Republica and Baxter, taking ownership of a busy grill section. At Baxter, the grill section centres around cooking over a charcoal barbecue and charcoal oven, with a strong focus on seafood, premium meats and seasonal produce. Located side by side on St Kilda Beach, both venues deliver busy, high-volume services with quality, produce-driven menus.
Key responsibilities
Take ownership of a busy grill section
Cook meat, seafood and vegetables with accuracy and consistency
Work with Baxter's charcoal barbecue and charcoal oven
Manage section preparation, service and pack-down
Maintain solid presentation, portion control and food-safety standards
Assist with ordering, stock rotation and waste control
Work closely with the Head Chef and senior kitchen team
Support high-volume restaurant, function and event services
About you
Experience as a Chef de Partie
Confident running a grill section during busy services
Experience cooking with charcoal or solid fuel is highly regarded (Baxter only)
Strong organisation, timing and attention to detail
Calm, reliable and consistent under pressure
A positive, team-focused approach
Available across weekdays, evenings and weekends
Valid Australian working rights
