There is always one person a room cannot function without. The one who holds it together; shift after shift, service after service.
The Frog Club is looking for an Assistant Venue Manager who understands that great hospitality is delivered through people, process, and presence; and that the most significant shift is the one you're on right now. Someone who holds the floor with authority and warmth, builds the supervisors around them, and ensures that every service feels exactly as it should.
This is not an office role with occasional floor walks. It is not a role for someone who manages from a distance.
The Frog Club is a bar and restaurant on Chapel Street, Windsor from the team behind The Gilson. The room draws inspiration from New York supper clubs, old Hollywood dining rooms, and the kind of restaurants that become part of a city's social fabric.
Steaks from the grill. Cold martinis. Music that carries the room forward. Seven nights a week.
We're looking for someone who understands that a great floor is built by a great operator; one who leads from within it, develops the team around them, and takes genuine ownership of the result every single night.
The Role
You'll be the Venue Manager's closest operational partner and the person who holds the room when they're focused elsewhere. You'll develop and lead the floor supervisors, manage the roster, drive commercial performance, and ensure the standards set at the top of the organisation are visible at every table on every shift.
This role includes:
Leading FOH operations as Manager on Duty across service
Building, coaching, and holding the Floor Supervisor team to a high standard
Driving upselling, service quality,
and guest experience across every shift
Managing rosters within labour budgets and adapting to the demands of the week
Overseeing stocktake, cash handling, and FOH financial compliance
Collaborating with the Bar Manager, Head Sommelier, and kitchen leadership
Managing guest complaints and escalations with composure and ownership
Helping build a venue that Melbourne's dining scene will talk about for years
Has experience leading a FOH team in a premium, high-volume restaurant
Leads from the floor and sets the tone through presence, not instruction
Is commercially sharp; understands labour, covers, average spend, and what moves them
Develops the people around them as instinctively as they manage a service
Stays calm when things move fast and decisive when it matters
Has high personal standards and the same expectation of everyone around them
Wants to help build something with genuine longevity and cultural relevance
