Working closely with the Owner, General Manager and Operations Manager, you'll play a hands-on, forward-facing role supporting venue managers and teams in the execution of day-to-day service and events. This is primarily a 5-night role, including weekends, with a strong focus on being on the floor where the action is. You'll be a driving force behind lifting standards across venues — coaching teams, running training, and helping build the skills and confidence of staff on the ground.

Coach and develop FOH teams across GPG venues, with a focus on Sequence of Service (SOS), service standards and execution.

Work alongside Venue and Restaurant Managers to identify weaknesses in team performance and implement corrective training.

Be highly visible and hands-on during service, identifying issues in staffing, service, communication, presentation, food and beverage knowledge and guest engagement.

Deliver practical training on the floor and ensure staff understand and consistently meet required standards.

Identify poor attitude, lack of urgency or lack of focus and address these directly through coaching and training.

Ensure consistent standards of food, wine, beverage and bar knowledge across the FOH team.

Identify opportunities to improve guest engagement and increase revenue through staff knowledge, recommendations and service.

Ensure service standards are maintained during breakfast, lunch, dinner and events.

Work with managers to ensure training is implemented and followed through, rather than simply delivered.

Provide Senior Management with clear feedback on team capability, performance gaps, training requirements and improvements achieved.

Monitor the effectiveness of training and identify where further intervention is required.





Travel between GPG venues as required and provide operational support where standards or performance require improvement.

About you

Experienced and qualified FOH operator with a proven track record in restaurant or venue management.

Strong understanding of food, wine, beverage and bar operations.

Proven experience operating in high-volume breakfast, lunch and dinner environments.

Strong understanding of Sequence of Service and guest experience.

Confident in identifying poor performance and addressing it directly.

Patient and able to coach staff with different levels of experience and capability.

Strong communicator who can give clear direction and constructive feedback.

Hands‑on leader who leads by example and is comfortable working on the floor.

Commercially aware, with an understanding of how service standards, staff engagement and product knowledge drive revenue.

Valid driver's licence and willingness to travel regularly between venues.

Available to spend 2-3 nights per month in Canberra.

Work across a diverse GPG hospitality group covering breakfast, lunch, dinner, corporate events and weddings.

Direct exposure and mentorship from Senior Management.
