Australian Catering Services is looking for a Monday to Friday Lunch and Dinner chef.
This position is at QPS Academy Oxley and offers genuine work-life balance rarely found in hospitality. Lead a high-volume buffet service for 200–270 people, taking full ownership of the kitchen as the senior presence when the Head Chef is offsite. Key responsibilities
- Prepare, cook and deliver buffet dinner service for approximately 200-270 people
- Work to approved menus, recipes and production requirements while applying strong bulk-cooking knowledge
- Plan production so food is ready at the correct time without unnecessary holding or deterioration in quality
- Keep buffet trays full, clean and presentable and maintain consistency in portion size, flavour and appearance
- Take operational responsibility for the kitchen during the shift and act as the senior kitchen employee when the Head Chef is not onsite
- Direct and supervise Kitchen Hands, Dishwasher and other allocated staff; allocate work and ensure required tasks are completed
- Maintain clear communication between kitchen and front-of-house staff and assist FOH during peak periods
- Complete allocated next-day preparation, including vegetables, proteins, sauces, meals and other components as required
- Complete all required Safe Food Pro records and nightly checks, monitor and record food temperatures and maintain correct hot-holding and cold-holding temperatures
- Ensure the kitchen is left clean, organised, stocked and ready to operate for the following shift
About you
- Trade qualification as a Chef
- Creative and skilled, bringing a professional flair and refined touch to every dish
- Demonstrated commercial kitchen experience with solid high-volume/bulk-cooking capability
- Ability to independently manage a busy dinner service and supervise kitchen staff
- Strong food-safety knowledge, including allergens and dietary requirements
- Strong organisational, time-management, planning, communication and problem-solving skills
- Ability and willingness to take responsibility for the kitchen when the Head Chef is absent
- Ability to work effectively as part of a team
