Summary
n
Our client, Hello Auntie Pty Ltd, is seeking to add a Chef De Partie to its established Marrickville restaurant. Known for blending Vietnamese heritage with contemporary dining, Hello Auntie offers creative interpretations of traditional Vietnamese and South-East Asian cuisine in a welcoming Inner West setting.
n
The typical job responsibilities will include, but are not limited to the following:
n
n
- Uphold and maintain excellent presentation standards in the kitchen
n
- Prepare, cook and present dishes according to their station
n
- Collaborate with the kitchen team members and Front-of-house staff in delivering superior service and maximising customer satisfaction.
n
- Delegate duties and responsibilities to kitchen employees to ensure service demands are met
n
- Lead employees by setting a positive example
n
- Assist the Head Chef and Senior Sous Chef with menu preparation and ensuring adequate supplies are available for expected service
n
- Work with and coordinate the work of apprentices in the preparation and production of food as required
n
- Ensuring sanitation and safety regulations
n
- Maintain excellent presentation standards for all food outlets, whilst maintaining recipe standards
n
- Maintain kitchen practices to maximise efficiencies and speed of service, and ensure warm plates get to the table on time
n
- Use of a comprehensive stock control system, wastage and breakage recording practices
n
- Ensure strict stock rotation and minimum wastage
n
- Maintain effective restocking methods with accurate par levels
n
- To comply with company policies and procedures,
as well as WHS and other company operational standards
n
- Use the Material Safety Data Sheet (MSDS)
n
- Keep all working areas clean and tidy & ensure all equipment is maintained, serviced, and cleaned to OHS standards
n
- Represent and promote our brand in the local community
n
- Promote the venue's image and ensure staff always portray the venue and its products in a positive way
n
- Maintain a system for taking guest complaints and feedback in a discreet and professional manner, and a line of communication back to the head chef
n
- Monitor deliveries and goods, and ensure they are in great condition
n
- Manage in-house stock control
n
- Maintain a comprehensive service manual, opening and closing procedures, ordering sheets and specific to-do lists
n
- Maintain food notes, recipes and method sheets with photos for kitchen and FOH staff, etc.
n
n
Applicants must meet the following minimum requirements to be considered for the role:

- A relevant Diploma Degree
n
- Experience/ Knowledge
n
- A minimum of 3 years of relevant experience
n
n
