SOUS CHEF - Catseye Pool Club | The Sundays
Located within The Sundays, Catseye Pool Club is a Chef Hat-awarded restaurant overlooking the iconic Catseye Beach. Developed in partnership with celebrated chefs Josh and Julie Niland, of Sydney's three-hatted Saint Peter, the restaurant brings their renowned approach to seafood, sustainability and quality to one of Hamilton Island's most distinctive dining experiences.
We're looking for an experienced Sous Chef to join the kitchen leadership team. This is an opportunity for a talented senior chef to lead within a high-end, seafood-focused kitchen, developing the brigade while maintaining the exceptional quality, consistency and sustainability standards behind Catseye Pool Club.

What you'll be doing
Working closely with the Head Chef, you'll take a hands-on leadership role across daily kitchen operations, leading the brigade through preparation and service while maintaining exceptional standards of quality, presentation and consistency.
You'll oversee kitchen sections, mentor and train junior chefs, support rostering and stock control, and contribute to menu refinement and daily specials. You'll also play an important role in maintaining the restaurant's seafood philosophy and commitment to sustainable, considered kitchen practices.
What we're looking for
- Certificate III in Commercial Cookery (Essential)
- Current Food Safety Supervisor Certificate (Essential)
- Current First Aid & CPR Certificate (Essential)
- Minimum 3-5 years' experience at Senior CDP or Sous Chef level
- Experience within high-end, seafood-focused kitchens preferred
- Solid leadership skills with experience training and mentoring chefs
- Confidence leading fast-paced kitchen services and maintaining quality under pressure
- Open Australian Driver Licence preferred and valid Australian working rights
