About the role

North Essendon Gourmet Butchery is seeking an experienced Qualified Butcher to join our team in Essendon, VIC. This is a full-time position that plays a crucial role in our business, delivering exceptional quality meat products and service to our valued customers. As a Qualified Butcher, you will be at the heart of our operations, utilising your expertise to prepare, cut, and present premium quality meats whilst maintaining the highest standards of food safety and hygiene.

This role is essential to maintaining our reputation as a gourmet butchery and ensuring customer satisfaction.

What you'll be doing

- Preparing and butchering prime cuts of beef, lamb, pork and poultry to customer specifications
- Operating butchery equipment safely and maintaining all tools in optimal working condition
- Maintaining strict food safety and hygiene standards in compliance with relevant legislation and regulations
- Presenting meat products attractively in display cases and packaging items for customer purchase
- Providing expert advice to customers regarding meat selection, cuts and cooking methods
- Managing inventory, stock rotation and waste minimisation
- Assisting with receiving and quality checking of deliveries
- Contributing to a clean and organised working environment throughout service hours
- Supporting team members and maintaining strong communication with management

What we're looking for

- Formal butchery qualifications or recognised apprenticeship completion in meat processing or butchery
- Proven experience working as a qualified butcher in a retail or commercial butchery workplace
- Comprehensive knowledge of different meat cuts, grades and their culinary applications
- Strong proficiency in the safe operation of butchery equipment including saws, slicers and knives
- Thorough understanding of food safety standards, hygiene regulations and HACCP principles




- Excellent physical stamina and manual dexterity for repetitive and physically demanding work
- Strong customer service skills with the ability to communicate knowledgeably about products
- Reliability, attention to detail and a commitment to maintaining high-quality standards
- Team player mentality with the ability to work collaboratively and independently as required
- Current understanding of Australian meat safety legislation and labelling requirements
