The Role
As Head Chef, you'll own the Astra kitchen — the menu, the standards, the people.
This is a genuine leadership role with real scope to shape the direction of Japanese-inspired fine dining on the Central Coast, and to grow your career within a global hotel brand as you do it.
What You'll Actually Be Doing
Lead the Astra kitchen team through every service, from prep to pass
Own and evolve the Japanese-inspired menu, season by season
Set the standard for consistency, presentation and quality on every plate
Manage food cost, ordering and supplier relationships
Train,



mentor and build a kitchen team that people want to work in
Partner with our Astra Venue Manager to bring the Astra vision to life
Keep the kitchen safe and compliant — WHS, food safety and HACCP, done properly
What You'll Bring
Proven experience as a Head Chef or an experienced Sous Chef ready to make their mark in a high-end or fine dining kitchen
A genuine capability in Japanese cuisine and technique – and the hunger to keep learning and growing this

A relevant trade qualification and food safety certification
