Job Scope

We are seeking a passionate and motivated Commis Chef to join our culinary team for the opening of our new lounge at Sydney Domestic Airport.

Reporting to the senior kitchen team, the Commis Chef will support the preparation and delivery of high-quality food while maintaining excellent standards of presentation, food safety, hygiene and cleanliness. The role requires robust teamwork, reliability and the ability to perform effectively in a fast-paced airport hospitality environment.

The successful candidate will assist with daily food preparation, service and kitchen operations while contributing to an exceptional dining experience for our guests.

Key Responsibilities

- Prepare ingredients for daily food production, including washing, peeling, chopping, portioning and seasoning meats, vegetables and fruits.

- Prepare menu items, salads, sauces and other dishes in accordance with approved recipes and instructions from the Head Chef and senior kitchen team.

- Assist with food preparation, cooking, plating and presentation to ensure consistent quality and presentation standards.

- Ensure food is prepared and delivered efficiently and within required service timeframes.

- Follow all food safety, hygiene, sanitation and workplace health and safety requirements.

- Maintain clean, organised and sanitised workstations, equipment, refrigerators, freezers and food preparation areas.

- Monitor food quality, expiry dates and storage conditions and appropriately dispose of expired or spoiled products.

- Assist with receiving deliveries and ensure products received meet required quantity, quality and storage standards.

- Monitor stock levels and notify supervisors of low or depleted supplies.

- Assist with stock rotation, FIFO procedures, replenishment and monthly stocktakes.





- Support effective cost control by minimising food waste and being mindful of food, labour and operational expenses.

- Follow established Standard Operating Procedures (SOPs) and assist with SOP reviews when required.

- Contribute ideas for menu development, recipes and ingredients where appropriate.

- Support the wider kitchen team during busy service periods and assist with other operational duties as required.

- Maintain a reliable, positive and professional approach while working collaboratively as part of the kitchen team.

Job Requirements

- Certificate, Diploma, Associate Degree or other qualification in Culinary Arts or Commercial Cookery is advantageous.

- Previous experience working in a commercial kitchen or hospitality environment.

- Sound knowledge of food safety, hygiene and sanitation requirements.

- Ability to work efficiently in a fast-paced and high-volume environment.

- Strong teamwork and communication skills.

- Good organisational and time-management skills.

- Reliable, self-motivated and committed to maintaining high standards.

- Ability to stand for extended periods and perform the physical requirements of the role.

- Familiarity with kitchen products, equipment, service procedures and safe food-handling practices.

- Flexibility to work on a rotating roster, including early mornings, evenings, weekends and public holidays as required by airport operations.

- Willingness to participate in stocktakes, SOP reviews and other operational activities.

About the Opportunity

This is an exciting opportunity to be part of the opening team for our new Sydney Domestic Airport lounge, with commencement anticipated between mid and late October 2026. You will have the opportunity to contribute to establishing the kitchen operation from the beginning while delivering the high-quality hospitality experience expected from Plaza Premium Lounge.
