Key Responsibilities:
• Own the day-to-day running of all kitchen sections, ensuring every dish leaving the pass meets EVT's quality and consistency standards
• Approve all prepared food items before service and enforce standard recipes and production specs across every outlet
• Maintain food safety, hygiene, and OH&S; compliance across all storage, prep, and service areas
• Inspect equipment, supplies, and work areas regularly for cleanliness and functionality
• Roster and staff all kitchen sections to match service demand,
adjusting quickly when volumes shift
• Hire, train, and supervise chefs, cooks, and kitchen hands; delegate clearly to chefs of lower grade
• Build a kitchen team that works productively and harmoniously, addressing underperformance early and celebrating wins
• Liaise daily with chefs, the F&B; Manager, and outlet supervisors to keep restaurant and banquet service running smoothly
• Deliver kitchen food and labour costs in line with budget
• Control consumption of operating supplies and monitor stock rotation across all storage facilities
• Track and report against financial targets, adjusting rosters and ordering to protect margin
• Anticipate and resolve guest needs and complaints in real time
• Stay current on menu trends and evolving recipes, bringing fresh ideas back into the kitchen
• Represent the kitchen professionally across all departments and in scheduled management meetings
What You’ll Bring:
• Proven experience as an Executive Chef in a multi-outlet hotel, resort, or high-volume F&B; environment
• A track record of hitting food and labour cost budgets, not just producing great food
• Hands-on people leadership - you've hired, trained, rostered, and managed a diverse kitchen brigade, and you deal with underperformance directly rather than avoiding it
• Deep working knowledge of food safety, hygiene, and OH&S; requirements, and the discipline to enforce them daily
• Robust stakeholder skills - you can work across F&B;, front-of-house, and management without friction
• A trade qualification in commercial cookery (or equivalent) and current food safety certification
• Genuine curiosity about menu trends and a habit of bringing new ideas into your kitchen rather than running the same menu on repeat
• The composure to run a high-pressure service while keeping your team calm, on task, and working as one unit
