Are you an experienced Senior Chef or Sous Chef looking for an opportunity to step up and make your mark in a busy, multi-outlet hospitality operation?

We’re looking for a passionate and experienced Executive Sous Chef to join our culinary leadership team at The Shellharbour Club.

This is an exciting opportunity to work closely with the Executive Chef, lead a large kitchen brigade and play a key role in delivering exceptional food, service and operational standards across our multiple food outlets.

OUR BUSINESS The Shellharbour Club, affectionally known as Shellys is a registered Club situated in the coastal region of Shellharbour, within the Illawarra region. As a strongly established market leader in the hospitality industry, we pride ourselves on being a family-friendly, community focussed club. We offer multiple diverse dining outlets, bars, live entertainment, indoor and outdoor kids play areas, versatile event spaces, while actively supporting the local community through grants.

ABOUT THE ROLE

As Executive Sous Chef, you will be a key member of our kitchen leadership team, supporting the Executive Chef across the day-to-day operation. You will:

- Lead, motivate, train and develop a large kitchen brigade.
- Work hands-on during high-volume food preparation and service.
- Support the Executive Chef with menu development, reviews and implementation.
- Drive consistently high standards of food quality, presentation and service.
- Assist with planning and coordinating kitchen operations, events and peak trading periods.
- Monitor food costs, labour, stock and wastage to achieve strong commercial outcomes.




- Ensure compliance with food safety, HACCP, WHS and legislative requirements.
- Take responsibility for kitchen operations in the absence of the Executive Chef.
- Help build a positive, accountable and high-performing kitchen culture.
- Embrace new systems, procedures and ways of working to continually improve the operation.

ABOUT YOU You’re more than just a great chef — you're a leader, organiser and team player who thrives in a high-volume environment. You will have:

- Previous experience as a Senior Chef or Sous Chef, with the ambition to progress your career.
- Experience in a large venue, multi-outlet operation and/or high-volume hospitality environment.
- Certificate III in Commercial Cookery or equivalent trade qualification.
- Strong hands-on culinary skills and experience managing high-volume service.
- Demonstrated ability to lead, train and develop a kitchen team.
- Excellent time management, organisation and forward-planning skills.
- Strong commercial awareness, including food costs, labour and wastage.
- Sound knowledge of WHS and food safety.
- Food Safety Supervisor certification – desirable.
- Basic computer skills, including Microsoft Word and Excel.
- A positive, reliable and solutions-focused approach.
- A genuine willingness to learn and embrace new systems and processes.
