About the Role
The Chef Supervisor is responsible for the production of meals; training and supervision of prisoners involved in food preparation; instruction of prisoners in cooking, baking and pastry making skills; control of the food budget; development and implementation of menus within the Department’s guidelines; developing business opportunities within the catering industry; ensuring the kitchen area complies with Health and Occupational Health and Safety regulations, HACCP and FoodStar.
This is a permanent, full time vacancy.
Suitability Requirements
- Knowledge of Australian Dietary Guidelines, FoodStar, HACCP, Kitchen Hygiene System, and Occupational Health and Safety requirements - Developing appropriate menus to cater for broad spectrum of offenders within the prison. Catering / Cooking experience within an industrial or institutional catering operation.
- Ability to deliver training - Developing and delivering training relevant to kitchen operations. Encouraging participation. Providing services and programs in a culturally appropriate manner.
- Operations and production - Demonstrated experience in managing and applying industry practices in all facets of a commercial catering operation including the administration, meals production and service. Further demonstrated management and application of all Statutory compliance requirements in relation to a commercial catering operation involving food safety, WHS and quality assurance.
- Computer Skills - A comprehensive understanding of computer applications such as spreadsheets, databases, document writing and emails. The ability to learn in-house computer systems.
- Infomation and knowledge management - Demonstrated experience in the management of information and knowledge from multiple sources. The ability to gather and share information and knowledge within a confidential environment.
- Workplace Relationships - Communicate constructively and build relationships; model integrity and respect; understand individual differences and diversity in all interactions; act professionally and acknowledge mistakes
The suitability requirements outlined will be what the panel will assess throughout the selection process.
Qualifications
- Certificate IV in Hospitality (with Commercial Cookery or Catering or Kitchen Operations speciality) and/or;
- Certificate IV in Commercial Cookery and/or;
- Certificate IV in Catering Operations and/or;
- Trade Pathway (Apprenticeship)
