Are you an experienced baker who lives and breathes great sourdough?
An established and growing regional food destination is seeking a talented Lead Sourdough Baker to take ownership of its sourdough bread section.
Producing fresh food seven days a week for a high-volume retail and dining operation, this is an opportunity to shape and develop a quality artisan bread program.The Role Reporting to the Executive Chef, you will lead the daily production and continued development of the sourdough range.
This is a senior, hands-on position—not an overall Head Baker role.Your responsibilities will include:Preparing and maintaining sourdough starters and levainsMixing, fermenting, shaping, proving and baking sourdough breadsPlanning daily and weekly productionManaging fermentation schedules, dough temperatures and hydrationMaintaining consistent flavour, crust,



crumb and presentationReducing waste and improving production yieldsOrdering and managing ingredients for the bread sectionTraining and supervising junior bakers and apprenticesMaintaining exceptional food safety and cleanliness standardsDeveloping seasonal products and exciting new breadsAbout You You will be a qualified baker or highly experienced commercial baker who:Has solid experience producing sourdough at commercial volumesUnderstands long fermentation, starter management and dough developmentTakes genuine pride in quality and consistencyCan confidently manage production schedules and early startsIs organised, reliable and comfortable leading othersEnjoys training and developing junior team membersWants ownership of a section and the freedom to improve the rangeWhat's on Offer$80,000–$90,000 + super, based on experienceStable, year-round workGenuine ownership of the sourdough programA modern and growing regional food operation serving approximately 5,000 customers each weekCreative input into new and seasonal productsSupportive bakery, kitchen and management teamsRelocation assistance may be availableVisa sponsorship may be considered for a suitably qualified and experienced candidate
