Mantra Tonsley Adelaide is seeking an experienced Food & Beverage Manager who loves being in the operation.
This is not a desk-based management role. We are looking for a hospitality leader who can run a great service, demonstrate the standard expected, coach the team on the floor and take ownership of the commercial and administrative disciplines behind a successful venue.
Located in the heart of the Tonsley Innovation Precinct, Tonsley Bar & Bistro (TBB) has an established customer base across hotel guests, corporate clients, conferences and events, and the surrounding local community.
With a strong foundation already in place, the opportunity now is to further develop the venue, lift execution and build TBB's position as a polished and welcoming social hub for the Tonsley precinct.
The Role
Reporting directly to the General Manager, you will take ownership of the day-to-day performance of Tonsley Bar & Bistro and our conference and event F&B; operations.
This is an operator-first leadership role. You will be expected to be visible and active in the business, particularly during key services, while also maintaining strong control of rostering, costs, stock, systems and team performance.
Your responsibilities will include:
Leading restaurant, bar and event operations
Working hands-on during service and setting the standard for the team
Training and coaching team members through practical, on-the-floor leadership
Driving consistently high service standards and guest experiences
Managing rosters, labour productivity and wage costs
Monitoring revenue, COGS, beverage margins and other key performance indicators
Managing stock control, ordering, inventory and supplier relationships
Developing and maintaining a commercially effective wine and beverage offering
Coordinating and executing conferences, functions and event catering
Working closely with the Head Chef to ensure strong coordination between kitchen and front of house
Supporting promotions and initiatives to grow hotel and local F&B; business
Maintaining operational procedures, food safety, RSA and compliance standards
Recruiting, onboarding, training and developing the F&B; team
Working closely with the General Manager and wider hotel leadership team
On any given day, you may move between running a busy service, coaching a team member, meeting an event client, reviewing a roster, placing orders and analysing the numbers.
About You
You are an experienced hospitality leader who leads from the front.
You don't simply tell people what great hospitality looks like – you can demonstrate it. You are comfortable rolling up your sleeves when required while maintaining the organisation, accountability and commercial focus expected of a manager.
You will ideally bring:
3-5+ years' experience in F&B; management or a comparable senior hospitality leadership role
Strong restaurant and bar operational experience
Demonstrated ability to lead, train and motivate a diverse team
Experience managing rosters, labour costs and productivity
Solid understanding of COGS, stock control and beverage margins
Experience with functions, conferences or event catering
Good wine, beverage and bar knowledge
Current Responsible Service of Alcohol (RSA) certification
Sound understanding of food safety and hospitality compliance requirements
Experience using POS, rostering and other hospitality management systems
Strong general IT skills, including email, Microsoft Outlook, Word and Excel
Confidence learning and working across multiple hotel and hospitality technology platforms
Strong written and verbal communication skills
Excellent organisation, planning and attention to detail
A practical, proactive and solutions-focused approach
Availability to work across the operational requirements of a seven-day hospitality business
Hotel experience is advantageous but not essential. More important is your ability to combine strong hospitality instincts, hands‐on leadership and disciplined commercial management.
