Alessandro Pavoni and Maestro Hospitality
— the team behind Ormeggio, Chiosco, a'Mare, Cibaria Manly & Noosa, and Postino Osteria.
Set across two levels in the heart of Enmore, Vineria Luisa brings together the spirit of an Italian
vineria and gintoneria
with the warmth and energy of a Sydney neighbourhood restaurant.
Our food is generous, produce-driven and unmistakably Italian — beautifully executed pasta, soulful classics and seasonal dishes designed to sit alongside an exciting list of Italian and Australian wines, cocktails and aperitivo.
We're growing our kitchen team and looking for talented chefs who want to build their careers in a kitchen where
quality, craftsmanship and genuine hospitality matter.
This is a casual position to start with.
We offer full time for the right candidate.
The Opportunities
We are currently recruiting across several levels:
Whether you're an experienced Chef looking to take the next step, a strong Chef de Partie wanting greater responsibility, or an established Sous Chef ready to lead, we want to hear from people who are passionate about Italian food and serious about their craft.
You'll work closely with our Head Chef and kitchen leadership team to deliver a seasonal menu with consistency, attention to detail and pride.
For our senior positions, you'll also have the opportunity to mentor junior chefs, contribute to kitchen operations and play an active role in developing the culture and standards of the brigade.
What We're Looking For
You'll bring:
Full Australian working rights
Formal culinary qualifications (Hospitality Certificate/ Diploma or equivalent) and/or 1-3 years of full time industry experience
Strong experience in quality restaurant kitchens
A genuine passion for Italian cuisine, produce and technique
Excellent preparation, organisation and time-management skills
High standards of presentation, cleanliness and food safety
The ability to remain calm, focused and consistent during busy services
Strong attention to detail and pride in your work
A positive, team-oriented approach to working within a small brigade
For
Chef de Partie and Sous Chef positions
, demonstrated experience managing a section and supporting junior team members will be highly regarded.
For
Sous Chef applicants
, we're looking for proven kitchen leadership experience together with an understanding of ordering, stock control, labour management and food-cost management.
Nice to Have
Food Safety Supervisor Certificate
Experience working with handmade pasta and traditional Italian techniques
Previous experience within hatted, premium or high-volume restaurants
