The Frog Club is looking for an Assistant Bar Manager to help build one of Melbourne’s outstanding late-night rooms, where cocktails are cold, the lighting stays low, the music carries the night forward and the energy builds table by table. A place people arrive for dinner and somehow leave after midnight.
This is not about tricks or theatre for theatre’s sake.
The Frog Club is a bar and restaurant opening on Chapel Street, Windsor from the team behind The Gilson. The room draws inspiration from New York supper clubs, old Hollywood dining rooms, downtown listening bars and the kind of restaurants that become part of a city’s social fabric.
Steaks from the grill. Cold martinis. Music that carries the room forward. Seven nights a week.
We’re looking for someone who understands that the best bars are built on consistency, atmosphere, timing, taste and people wanting to come back tomorrow night.
The Role
You will work directly alongside the Bar Manager to lead the bar team through service, uphold the quality of every drink that leaves the bar, and build the kind of operation the whole room can rely on. When the Bar Manager is not in the building, you are the standard.
This role includes:
· Supporting the Bar Manager in leading, developing and rostering the bar team day to day
· Running the bar independently in the Bar Manager’s absence — without the standard dropping
· Holding the quality of every drink on every shift — technique, temperature, presentation, timing
· Training bartenders and barbacks with consistency and care
· Managing stock, ordering and waste with commercial precision
· Contributing to cocktail development and seasonal menu changes
· Building solid supplier relationships alongside the Bar Manager
· Applying RSA obligations confidently and consistently across the team
· Working collaboratively with the floor, kitchen and sommelier teams to ensure every service connects
We’re Looking For Someone Who
· Has genuine senior bar experience — Supervisor level or above — in a quality, high-volume venue · Leads from the bar, not from a distance — and earns the team’s respect through their own standard
· Is technically strong across classic cocktails, spirits, wine and the mechanics of a busy bar
· Develops the people around them as naturally as they manage a service
· Understands stock, cost and margin — not just recipes
· Stays calm under pressure and sharp when it counts
· Wants to grow into a Bar Manager role and has the discipline and ambition to earn it
· Has full availability across evenings and weekends — this is a late-night, seven-night venue
