Ghazale Enterprises Pty Ltd T/A Geppetto’s is an established restaurant specialising in Italian cuisine. As part of our business expansion and menu diversification, we are introducing a dedicated Lebanese cuisine menu to complement our existing Italian offerings and broaden our operations.
Due to the expansion of business and busy times approaching we have 2 positions available to be filled in, one for an Italian chef and another for a Lebanese chef.
We are seeking an experienced and passionate Chef specialising in Lebanese cuisine to join our team and play an important role in developing and delivering our new Lebanese menu.
We are also seeking an experienced Chef specialising in Italian Cuisine to join us as early as possible.
About the Role The successful candidates will have extensive professional experience in Lebanese and Italian cuisine, with strong knowledge of traditional Lebanese and Italian cooking techniques, ingredients and dishes.
Key responsibilities will include
- Preparing and cooking authentic Lebanese and Italian dishes to a consistently high standard.
- Developing and implementing Lebanese and Italian menu items as part of our business expansion.
- Preparing mezze, grilled meats, salads, pastries and other Lebanese and Italian specialties.
- Maintaining consistency in taste, quality, presentation and portion control.
- Assisting with menu planning and recipe development for Italian and Lebanese cuisine.
- Managing food preparation and kitchen operations for the Lebanese menu.
- Maintaining high standards of food safety, hygiene and cleanliness.
- Monitoring stock levels and ensuring appropriate use of ingredients.
- Working collaboratively with the existing kitchen team and supporting busy service periods.
Skills & Experience
- Relevant commercial cookery qualification is desirable.
- Plan menus, estimate food and labor costs, and order food supplies.
- Extensive skilled experience as a Chef specialising in Lebanese/Middle Eastern cuisine and Italian cuisine.
- Strong knowledge of traditional Lebanese and Italian ingredients, recipes and cooking techniques.
- Demonstrated ability to develop and maintain an authentic Lebanese menu.
- Ability to work efficiently in a fast-paced restaurant environment.
- Strong organisational and time-management skills.
- High standards of food quality, presentation and hygiene.
- Ensure hygiene regulations are explained and enforced.
- Select and train staff as required.
- Maintain knowledge of food health and safety standards.
