Chat Thai is one of Sydney’s most established and reputable dining groups, renowned for serving high-quality, authentic Thai cuisine across our high-volume CBD venues. We are seeking an experienced and dedicated Head Chef / Kitchen Manager to lead our kitchen team, oversee operations, and maintain our high culinary standards.

Role Description

Reporting to Venue Management, you will oversee daily commercial kitchen operations, manage food production, lead kitchen staff, and ensure profitability and food safety across all shifts.

Key Duties & Responsibilities

- Supervise and coordinate daily commercial kitchen operations, service flow, and food quality.
- Plan menus, estimate food and labor costs, and implement portion control to maintain target margins.
- Oversee raw ingredient procurement, inventory management, supplier relations, and stock control.
- Recruit, train, schedule, and supervise kitchen staff, fostering a team-oriented team environment.
- Demonstrate advanced culinary techniques and ensure authentic flavor profiles and presentation standards are consistently maintained.
- Monitor kitchen safety, hygiene,



and strict compliance with HACCP food safety regulations and WHS policies.

Required Skills & Qualifications
- Qualification: Certificate IV in Commercial Cookery (or equivalent formal tertiary qualification in Culinary Arts/Hospitality Management), OR at least 3 years of relevant professional experience.
- Experience: Minimum 2 years of experience as a Chef, Head Chef, or Kitchen Manager in a high-volume, fast-paced restaurant environment.
- Extensive hands-on knowledge of authentic Asian/Thai cuisine preparations, ingredients, and cooking methods.
- Proven track record in menu development, kitchen budgeting, food cost management, and staff rostering.
- Strong leadership, communication, and team management capabilities.
- Current Food Safety Supervisor certificate.
