Palomar is a vibrant Paddington restaurant inspired by the vibrant flavours of Southern Europe, North Africa, and the Levant. Complementing the menu is a thoughtfully curated wine list that explores Mediterranean regions alongside a selection of acclaimed Australian producers.

Next door, our sister venue, The Mulwray, offers an eclectic collection of Australian and French wines, with a strong focus on minimal intervention wines, biodynamic producers, and intentional winemaking.

COME AS YOU ARE & SHARE YOUR TALENT

As a Junior Sommelier, you will support our Sommelier team and front-of-house team in providing expert wine service and maintaining our cellar. You’ll play an important role in enhancing the guest experience through confident recommendations and an enthusiasm for sharing knowledge.

What does your working day look like

- Assist in daily wine service during lunch and/or dinner shifts
- Support cellar management, stock rotation, and deliveries
- Maintain accurate wine list updates and by-the-glass offerings




- Provide wine recommendations and pairings to guests
- Participate in tastings, training sessions, and staff education
- Work collaboratively with the restaurant team to ensure smooth service

We are looking for you – with personality and that certain something …

- A genuine passion for wine and hospitality
- Some previous restaurant or bar experience preferred
- Working towards (or interested in pursuing) WSET or CMS qualifications
- Strong attention to detail, curiosity, and willingness to learn
- Friendly, professional manner with excellent communication skills
- Flexibility to work evenings and weekends as required
