Master Charcutier | Charcuterie Specialist
The Role
We are seeking an exceptional Master Charcutier to lead the next evolution of a distinctive premium charcuterie range within an established Australian food business.
This is a highly specialised appointment.
We are looking to revamp and significantly expand our charcuterie program, increasing the sophistication of our range and substantially broadening our technical and production capability.
We are seeking someone who is already recognised as a subject matter expert in charcuterie and who will become the business’s principal authority in this discipline.
The successful candidate will be responsible for elevating and expanding our existing charcuterie range, introducing new products and techniques, and building a dedicated specialist team to strengthen and expand our capability in this area.
This is not a conventional restaurant Chef position, nor does it involve responsibility for managing the broader Production Kitchen.
Your focus will be charcuterie.

What You Will Do
- Lead the development and evolution of our specialist charcuterie program
- Review, refine and elevate our existing premium product range
- Develop new products, recipes, techniques and flavour profiles
- Produce exceptional artisan charcuterie, including pâtés, terrines, sausages, cured meats, smoked products and other specialist items
- Introduce traditional and contemporary techniques that expand our charcuterie capability
- Work confidently across curing, smoking, fermentation, emulsification, cooking and preservation
- Apply deep technical knowledge of meat, fat, seasoning, cultures, curing agents and production methodology
- Establish detailed recipes, specifications, production standards and processes
- Set and maintain exacting standards across flavour, texture, consistency and presentation
- Work with premium cuts, whole muscles and specialist raw materials
- Improve yields and product utilisation without compromising quality
- Maintain rigorous HACCP, food safety, traceability and hygiene standards
- Collaborate with chefs,
butchers and production specialists across the broader business
- Build, train and develop a dedicated specialist charcuterie team
- Transfer specialist knowledge and technical capability as the team and range expand
- Establish a charcuterie function capable of continuing to grow in scale, sophistication and reputation
About You
We are deliberately setting a very high bar for this appointment.
We are not simply looking for a Chef who has worked with charcuterie. We are looking for someone whose career, reputation and body of work demonstrate genuine expertise in the discipline.
You may have developed your craft within renowned charcuteries, butcheries, restaurants, hotels, artisan producers, meat businesses or specialist food operations in Australia or internationally.
You will ideally bring:
- Significant professional experience specialising in charcuterie
- A highly regarded professional background and reputation within your field
- Demonstrated mastery of cured, cooked, smoked and fermented meat products
- Deep technical knowledge of traditional and contemporary charcuterie
- Exceptional knowledge of meat, fat selection, seasoning, curing, fermentation and preservation
- Strong butchery fundamentals and a deep understanding of different cuts and their applications
- A proven ability to create distinctive products rather than simply execute established recipes
- Experience building technical capability in others through training, mentoring and knowledge transfer
- Robust knowledge of HACCP and the food safety requirements associated with specialist meat production
- Exceptional attention to detail and consistency
- An uncompromising approach to craftsmanship and product quality
- The creativity and technical confidence to critically assess an established range and materially elevate it
Formal culinary qualifications are highly regarded, although expertise, reputation,
career pedigree and demonstrated results will ultimately carry greater weight.
