This is an exciting prospect for a strong operational leader to oversee a diverse and dynamic F&B; offering across conferencing, weddings & events, restaurant dining, and in-room guest service, while playing a key role in shaping the next phase of the hotel's growth and guest experience journey.

ABOUT THE ROLE:
n
Reporting directly to the General Manager, this role is responsible for leading all Food & Beverages operations across the property, ensuring exceptional guest experiences, strong commercial performance, and a positive, high-performing team culture.
n
The role oversees:
n
n
Weddings
n
In-room dining and hotel guest service delivery
n
n
This is a hands-on leadership role requiring strong operational capability, commercial acumen, and the ability to lead large service periods while continuously driving standards, culture, and profitability.
n
Key responsibilities include:
n
n
Leading and developing a high-performing F&B; team across multiple outlets and service styles
n
Driving revenue growth and operational profitability
n
Managing labour costs, payroll, and roster efficiency
n
Delivering exceptional weddings, conferencing, and events experiences
n
Working closely with the Executive Chef and hotel leadership team to elevate the overall guest experience
n
Creating strong team engagement, accountability, and service culture
n




Maintaining exceptional presentation and operational standards across all guest-facing areas
n
Supporting strategic planning and continuous improvement initiatives across the business
n
n
ABOUT YOU:
n

You will bring:

Previous experience leading a large-scale or boutique hotel F&B; operation Strong knowledge of restaurant, conferencing, weddings, and events operations Sound commercial and financial acumen with experience managing payroll, labour costs, and stock control
n
A hands-on leadership style with the ability to lead service from the floor
n
Exceptional guest engagement and relationship-building skills A passion for developing teams and creating a strong workplace culture
n
The ability to thrive in a fast-paced, evolving environment
n
Strong organisational and communication skills
n
A proactive and solutions-focused mindset
n
Immaculate presentation and professionalism
n
Flexibility to work weekends, evenings, and public holidays as required
