ASSISTANT VENUE MANAGER – ROYAL DAYLESFORD HOTEL – DAYLESFORD THE PUB

Located in the heart of Daylesford, the Royal Daylesford Hotel is an iconic regional hotel offering premium accommodation, a vibrant sports bar, quality dining, gaming and exceptional service.

With a brand-new kitchen, recently renovated bar and gaming room, beautiful accommodation and a well-established team, the hotel has built a strong reputation with both locals and visitors to the region.

The business continues to grow, and we are now looking for an experienced Assistant Venue Manager to work closely with the General Manager and owners in the day-to-day management and ongoing development of the hotel.

THE ROLE

This is a genuine hands-on management position, working alongside the GM across all areas of the business.

You will play an important role in ensuring the hotel operates efficiently, profitably and to consistently high standards, while leading and developing the team.

Key responsibilities will include

- Working closely with the GM and owners to manage the day-to-day operations of the hotel
- Taking responsibility for the venue in the GM's absence
- Leading daily service and ensuring consistently high standards across food, beverage, gaming and accommodation operations
- Managing and developing the team, including recruitment, onboarding, training, performance management and staff engagement
- Preparing and managing rosters to ensure appropriate staffing levels and effective labour management
- Monitoring service standards, customer experience and operational performance
- Managing stock control, ordering, purchasing and inventory levels
- Monitoring labour costs,



COGS and other operational expenses
- Assisting with budgets, financial reporting and strategies to maximise revenue and profitability
- Identifying opportunities to increase revenue across the hotel's various departments
- Ensuring compliance with Victorian liquor, gaming, workplace health and safety and food safety requirements
- Implementing and maintaining operational procedures and systems
- Working with the GM to identify areas for improvement and implement strategies to increase efficiency
- Maintaining strong relationships with customers, suppliers and the local community
- Supporting the ongoing development and growth of the hotel and its team

ABOUT YOU We're looking for someone who is a confident hospitality manager and genuinely enjoys being involved in the business.

You will have

- A minimum of 5 years' recent experience in a senior hospitality management role
- Strong experience managing a pub, hotel, restaurant or similar hospitality operation
- Excellent knowledge of food and beverage operations, including beer, wine, spirits and cocktails
- Strong commercial awareness and an understanding of labour, COGS, stock control and revenue management
- Experience recruiting, training and developing hospitality teams




- Strong knowledge of Victorian liquor and gaming regulations
- Current RSA and RCG qualifications, or the ability to obtain these
- Excellent communication and interpersonal skills
- Strong organisational and time-management skills
- The ability to confidently manage a venue autonomously
- A natural ability to lead, motivate and develop a team
- A friendly, engaging and down-to-earth personality
- A genuine passion for hospitality and delivering great customer experiences
