Enzo's Cucina is a locally owned Italian restaurant with four venues across NSW and QLD. Carrara is our Gold Coast home, and we're handing the morning over to the right chef.

We're not after someone to reheat a menu that already exists. We're after a Breakfast Chef who wants to build one, and turn our mornings into the spot people drive across the Coast for.

THE ROLE

You run breakfast at Carrara. The menu, the standard, the section, the team on the floor with you.

Modern Italian breakfast, done properly. Big flavour, honest produce, plates that look as good as they taste. If it doesn't stop someone mid-scroll, it doesn't go on the pass.

You'll have real say in what we serve and real backing to make it happen.

WHAT YOU'LL BE DOING

- Designing and developing a contemporary breakfast menu that people talk about
- Leading and training the breakfast brigade, setting the pace and the standard
- Running service smooth and clean through a busy morning
- Plating with an eye for detail. Colour, height, contrast. Food that photographs itself
- Ordering, prep lists, waste control and food cost
- Keeping food safety and cleanliness tight, every shift
- Working with the front of house team so the whole morning runs as one

WHAT WE'RE AFTER

- Trade qualified chef, or equivalent hands-on experience




- Proven breakfast or brunch experience in a busy venue
- A track record of leading a section or a small team
- Genuine creativity. You've put dishes on a menu and watched them sell
- Able to help build a breakfast menu from scratch. Ideas, costings, trials and dishes that actually sell
- Strong plating and presentation skills, with an understanding of how food reads on camera
- Reliable, early, and calm when the tickets stack up
- Someone who wants to build something, not just clock on
