Salary: $80,000 per annum plus superannuation
Sweet Wheat is an artisan bakery based in Perth, Tasmania, producing naturally leavened bread, and pastry for wholesale customers, farmers markets and our developing retail bakery.
We are seeking an experienced Baker to join our production team in a permanent, full time position. The successful applicant will contribute to all stages of bread production and help maintain consistent product quality, food-safety standards and an efficient bakery operation.
Key responsibilities
- Weighing and preparing ingredients according to production requirements
- Mixing, kneading and developing bread doughs
- Monitoring fermentation and adjusting production processes where required
- Dividing, pre-shaping, shaping and preparing dough for baking
- Producing sourdough loaves, tin breads, baguettes and other bread products
- Loading, steaming, baking and unloading bread using deck and convection ovens
- Monitoring oven temperatures, baking times and finished-product quality
- Coordinating daily bread production and workflow with other bakery staff
- Checking raw-material quality and reporting stock requirements
- Maintaining product consistency, yield and presentation
- Following food-safety, workplace-health-and-safety and cleaning procedures
- Cleaning and maintaining bakery equipment, trays, tins and production areas
- Assisting with the training and supervision of less-experienced bakery staff
- Contributing to product development and improvements to bakery processes
Some production of laminated dough, pastries and other baked products may also form part of the role.
Skills and experience
Applicants should have:
- An AQF Certificate III or Certificate IV in Baking, or an equivalent relevant qualification; or
- At least three years of relevant commercial baking experience where experience is accepted in place of a formal qualification
- Demonstrated experience producing bread in a commercial bakery
- Knowledge of dough development, fermentation and baking processes
- Experience operating commercial mixers, ovens and other bakery equipment
- A sound understanding of food-safety and workplace-safety requirements
- The ability to work reliably as part of a small production team
- Strong attention to quality, consistency and production timing
- The physical capacity to perform the inherent requirements of a commercial baking role
Experience with artisan sourdough production, stoneground flour and deck ovens will be highly regarded.
Employment conditions
This is a permanent, full-time position averaging 38 hours per week. The ordinary roster will include early-morning work and Saturday work. Exact starting and finishing times will be confirmed in the employment contract.
The position is based at Sweet Wheat in Perth, Tasmania.
