Assistant Venue Manager Hospitality— CBD Entertainment Precinct
Spiegelhaus is Melbourne's home of arts, culture, live spectacle and late nights: a 100-year-old Spiegeltent, a multi-level rooftop with multiple bars and event spaces, and an amphitheatre-style live music and DJ venue for up to 1,200. On a big night more than 2,000 guests move through the venue across multiple experiences at once.
We had a robust first season. Season two is here, and we're building the leadership layer that runs the hospitality operation night to night.
What you'll own
The engine room of the hospitality side. Rosters, systems, standards and the people who run the shifts. You report to the Venue Manager, you lead the Duty Managers and supervisors, and you step into the VM seat when they're not in the room.
What you'll do
Build and publish rosters to budget, on time, every week.
Move labour as the trade plan changes.
Run shifts to standard: flow, pace, recovery, close-down.
Lead from the floor through peak and key performances.
Work a Duty Manager shift when the week calls for it.
Coach Duty Managers and supervisors through pre-shifts and feedback.
Own stocktake, ordering, par levels and waste.
Run onboarding and the 90-day plan for new starters.




Own the training calendar and the capability uplift.
Keep SOPs, checklists and compliance documentation current.
Audit cleanliness, presentation and standards across the venue.
Support the VM on weekly trade reviews and shift reporting.
What you'll bring
Experience as an AVM, or a strong Duty Manager ready for the step up.
A roster you can defend, and the numbers to back it.
Real ownership of bar COGS, wage percentage and stock.
The ability to develop people, not just direct them.
A current Victorian RSA. First Aid or Food Safety Supervisor a plus.
Availability across seven-day trade, nights and weekends.
