Be the person we trust to run the shop
Patrick's Bakery is a busy retail bakery in Regents Park with a reliable passion for elite coffee — fresh pies and pastries, exceptional coffee, and loyal regulars who keep the mornings and weekends humming. We've built a good crew of 10–12 and a product we're proud of. We're looking for a hands-on supervisor to take charge of the day-to-day — the person in charge on the floor, and the one who runs the shop confidently when the owner isn't in store. If you take pride in a well-run bakery, love leading a team, and want the ownership of running the place your way (to our standard), this is it.
And the hours suit a balanced life. This is a retail bakery, not a late-night venue — early starts, but you're home by the afternoon.
What you'll own
Run the floor. Be the point of authority during service and whenever the owner is away — the person the team looks to. Set the coffee standard. Coffee is our pride — you're a strong barista who dials in the machine, holds the quality bar, trains others, and steps on during the rush.
Keep service sharp. Cabinets stocked and presented, oven loads timed, no customer left waiting.
Manage stock. Ordering, suppliers, stocktake, and keeping waste down.
Lead the team. Guide, train, and develop staff so the shop runs to standard no matter who's on.
Open and close. Full clean-downs and next-day prep, done properly.
Handle the day. Deal with customer situations and issues calmly, and know when to escalate to the owner.
Keep it safe and clean. Uphold food safety and WHS standards at all times.
About the role
This role will require working at 5am (so early starts are required). It will require working on weekends. It is a physical role at times. Service moves fast and you'll be on your feet leading from the front, not watching from the back. The people who thrive here like the pace, take ownership, self start, are resilient, and get satisfaction from a shop that runs like clockwork. If that's you, you'll love it. You'll know you're nailing it when:
- When you're in charge, the owner walks in to find it handled — not to fix things
- Regulars get the same fast service and excellent coffee every visit, peak or not
- The cabinet and floor always look the part — nothing tired, nothing empty
- Stock is tight: orders right, waste down, never out of the big sellers (i.e. popular products)
- Newer staff are visibly better because you trained them
- Food safety and cleaning pass every check — no reminders needed
What you'll bring
Essential Barista experience — confident, fast, and consistent on a commercial machine
Prior supervisory or team-leader experience in a café, bakery, retail, or hospitality setting
Hold, or be willing to obtain before commencing,
a Food Safety Supervisor qualification — at a minimum the units SITXFSA005 (Use hygienic practices for food safety) and SITXFSA006 (Participate in safe food handling practices), which together meet the SITSS00069 Food Safety Supervision Skill Set
Experience with ordering and stock control
Full working rights in Australia
Current driver's licence and reliable car (early starts; limited public transport at open)
Nice to have
Experience in a bakery or high-volume, coffee-focused venue Familiarity with Square (POS) or similar
Hours
Weekday-focused with some weekend cover as the business requires. Early starts apply — but no nights. Full-time, 38 hours per week, permanent.
Pay
Permanent full-time role paid under the Fast Food Industry Award [MA000003], Level 3 (in charge of 2 or more persons), plus superannuation. Remuneration discussed at interview.
